With only 20 minutes of preparation time and an additional 20 minutes baked at 160 degrees Celsius, it’s a quick and satisfying dessert option.

Ingredients

  • 4 egg whites

  • 300g caster sugar

  • 10ml lemon juice

  • 15ml corn flour

  • 1x 250ml cream

  • Seasonal fruits

Directions

  • Preheat your oven to 160 degrees Celsius.
    Line a baking tray (25 x 30) with parchment paper.
  • In a mixing bowl, whisk the egg whites until they form soft peaks.
  • Gradually add the caster sugar while continuing to whisk until the mixture becomes glossy.
  • Fold in the corn flour and lemon juice.
  • Spread the mixture evenly onto the prepared baking tray. Bake for 20 minutes, then allow it
    to cool completely (I usually do this a few hours before serving).
  • Once cooled, sprinkle caster sugar over the meringue. Place another piece of parchment
    paper on top and invert a baking tray over it. Carefully flip it.
  • Remove the parchment paper from the baked meringue. Whip the cream until stiff peaks
    form and spread it over the meringue.
  • Arrange sliced fruits of your choice (nuts are also a tasty option) on top, then use the
    parchment paper to gently roll up the Swiss roll.
  • Place the roll seam-side down on a serving platter. Feel free to decorate it with additional
    fruits or edible flowers.

Notes

  • For optimal flavor, allow it to rest for a bit before serving.
