4 egg whites
300g caster sugar
10ml lemon juice
15ml corn flour
1x 250ml cream

Directions
- Preheat your oven to 160 degrees Celsius.
Line a baking tray (25 x 30) with parchment paper. - In a mixing bowl, whisk the egg whites until they form soft peaks.
- Gradually add the caster sugar while continuing to whisk until the mixture becomes glossy.
- Fold in the corn flour and lemon juice.
- Spread the mixture evenly onto the prepared baking tray. Bake for 20 minutes, then allow it
to cool completely (I usually do this a few hours before serving). - Once cooled, sprinkle caster sugar over the meringue. Place another piece of parchment
paper on top and invert a baking tray over it. Carefully flip it. - Remove the parchment paper from the baked meringue. Whip the cream until stiff peaks
form and spread it over the meringue. - Arrange sliced fruits of your choice (nuts are also a tasty option) on top, then use the
parchment paper to gently roll up the Swiss roll. - Place the roll seam-side down on a serving platter. Feel free to decorate it with additional
fruits or edible flowers.

- For optimal flavor, allow it to rest for a bit before serving.
